With Pascal being somewhat the "original Macintosh programming language", the Mac saw a good bunch of Pascal compilers during the 1980's. Only one would stick with us until the early 90s though - Symantec's THINK Pascal.
Enthusiastically used and defended by Mac Pascal programmers, this is the package to get if you want to code in Pascal for System 7. Beware though, it can only create 68k code, not native PowerPC code. If you want to code native PowerPC applications, use CodeWarrior instead.
